The answer

Matthew, in 27:24, and only Matthew. Mark, Luke and John have no hand washing. The dream of Pilate's wife, five verses earlier (27:19), is also found only in Matthew. The New Oxford Annotated Bible, a study Bible, says in its note that both details help to clear Pilate and the Romans of responsibility for Jesus's death.

Why it’s interesting

In the very next verse, Matthew 27:25, the people as a whole answer: "His blood be on us and on our children!" The scholar Raymond Brown writes that this is a set legal phrase for accepting responsibility, not a curse the people put on themselves. He adds that the passage has been used to support anti-Judaism that must be rejected.
