The answer
Roasted over the fire. "Do not eat any of it raw or boiled in water but roasted over the fire, with its head, legs, and inner organs" (Exodus 12:9). It is eaten that same night with unleavened bread and bitter herbs (Exodus 12:8), and whatever is left by morning is burned (Exodus 12:10).
Why it’s interesting
A study Bible, the New Oxford Annotated Bible, says the animal is roasted over fire like an offering, though Exodus does not call it a sacrifice here. Two Bible scholars, Michael Coogan and Cynthia Chapman, add that the bitter herbs, probably a type of lettuce, are tied to the bitterness of the slavery in Egypt (Exodus 1:14).
